Day 52: Chef Jen


I had the day off today, which was fucking awesome. I woke up when M left to work and did a little work on the computer but got so sleepy and cold I decided to crawl in to bed and bundle up in my sweatpants and blankets. I am really good at turning off my alarm without opening my eyes and ended up snoozing until 2:30! Oy! Since my time was cut short due to my coma I had to cut some of my planned activities. So unfortunatlye the gym had to go, because I had shoes to buy and dinner to cook. I have my priorities.

My dinner is sooooo amazing. I really love cooking and love when I get the chance to go to the store for that night's ingredients and take my time making it delicious. I made Creamy Roasted Tomato Basil Soup and Turkey, Ham, Mozzarella Croissant wraps. See Below for the recipes/instructions. I don't use recipes when I cook, so there aren't measurements but it's not difficult and it is oh so tasty.





Croissant Wraps (4)

2 Cans of Crescent Rolls
Thinly sliced ham
Thinly sliced turkey
Cheese (Mozzarella Parmesan blend)
Oregano
Garlic powder
Black pepper

It never fails, every time I open the crescent rolls and they make that pop as you tear the paper, I jump. Every time.

Take half the triangles and lay them out, overlapping. Add meats, sprinkle cheese, add seasonings, then fold the edges over the top, kind of like braiding, and pinch together any open spots. Place on a baking sheet sprayed with Pam, sprinkle top with parmesan.

Bake according to croissant directions. 375 F for 10-12 min

Roasted Tomato Basil Soup

6 Roma Tomatoes
1 can of Tomato Sauce
Heavy Cream
Basil
Garlic
Olive oil
Black Pepper

This is where I got a little fancy.

Cut tomatoes in half and seed. Cover bottom of baking dish with a bit of olive oil, place tomatoes in dish, drizzle olive oil over tomatoes and season with garlic powder. Bake at 375 for 45 minutes or until slightly toasted. I peeled off the skins because it was incredibly easy after they are roasted, but I suppose its's not super necessary. Place tomatoes in blender/food processor and pulse to your preference.

Add tomatoes to a pot with the tomato sauce/puree, add in chopped basil, add seasonings to taste, add cream. Voila!
